The attack continues, but the turn doesn't switch over yet.  If the memory gauge is still at 1 or more on your opponent’s side after the attack has ended and all effects triggered by it have been activated, only then does the turn end.

I attack with [EX1-035 Kabuterimon] and digivolve into this card with its [When Attacking] effect. Can I then digivolve again during the same attack with this card's [When Digivolving] effect?

No, the time to trigger [When Attacking] effects has already passed, so the effect doesn't activate.

No. The effect reads, “This Digimon can digivolve,” so you can choose not to.
