It treats it as a Digimon that digivolves, therefore "when a Digimon would digivolve" effects and "when a Digimon digivolves" effects will trigger. In addition, if a "Digimon can't digivolve" effect activates, digivolution won't be possible using this effect that also treats the Tamer as a Digimon.

If I use this card's [When Digivolving] effect to digivolve into [AncientGreymon] at such times, the end of the turn timing has already passed, but does this card's effect delete that [AncientGreymon]?

No, it won't be deleted. Effects that are processed at specific timings will be processed when that timing arrives, similar to triggered effects. If this card's effect is used to digivolve at the end of the turn, the end of the turn timing has already passed, therefore this card's "delete this Digimon at the end of the turn" isn't processed.

No, you can't. For this card's 1st effect, you declare a digivolution, then upon revealing this card, you can also choose a Tamer as the card to digivolve, and that Tamer is also treated as a level 3 Digimon. As with the normal digivolution procedure, after revealing this card and declaring a digivolution, you can't choose to not digivolve. In addition, you can't declare digivolution into this card in the first place unless there is a card on the field that you can digivolve.
